Crack your eggs into a bowl or mixer, season with salt, and add the sugar.

Whisk it together and slowly pour in about half the milk, stirring until combined.

Sift the flour separately, then add it to the egg and milk mixture.

Pour in the remaining milk and 1-2 tablespoons of vegetable oil.

Heat up your skillet with a light coating of oil—a pastry brush works great for this. Pour in some batter, and you'll immediately see those tiny holes starting to form.
