A vibrant and crunchy winter vegetable preserve made with tomatoes, cucumbers, peppers, and cabbage. A great way to preserve the summer harvest and serve a delicious appetizer during the cold season.

Method
Shred the cabbage, cut the bell pepper into strips, slice the onions and cucumbers into half-moons, chop the tomatoes into small pieces, and mince the herbs.
Place everything in a pot, add salt and sugar, and mix well so the vegetables release their juices.
Turn on the heat and bring to a boil.
After boiling, cook for 10 minutes, then add the herbs, vinegar, and oil, and cook for another 10 minutes.
Pack into sterilized jars (I pour boiling water over the jars and cover with lids for 10 minutes), seal, and cover with a blanket (so the jars cool down gradually), then move to the cellar.
