Method

Grate the zucchini using a Korean mandoline or julienne shredder, salt lightly, and let rest for 15-20 minutes, then squeeze out the excess liquid thoroughly.

Grate the carrots as well, add a couple of pinches of salt, and gently massage them with your hands.

For the dressing, whisk together minced garlic, vinegar, red pepper flakes, soy sauce, honey, and olive oil.

Combine the zucchini, carrots, and finely chopped parsley.

Pour the dressing over the vegetables and toss thoroughly.
