Method

Wash the cucumbers and cut them into sticks.

Grate the carrots – if you have a julienne peeler, even better!

Crush the garlic with the flat of your knife and chop it roughly.

Toss everything into a large pot, add all the spices, salt, sugar, oil, and vinegar. Mix well.

Let it marinate for about an hour, stirring occasionally so the cucumbers release as much juice as possible.

Pack into sterilized jars.

Sterilize in boiling water with sterilized lids on for about 15 minutes.

Remove from water and seal the jars.

Flip them upside down, wrap in a blanket or towel, and let cool completely.
