Method

Whisk the eggs with milk and salt.

Fold in the chopped vegetables and pepper.

Lightly coat a skillet with vegetable oil.

Pour in half (!) of the mixture and cook until the bottom sets while the top is still slightly runny.

Roll the omelet up from the edge toward the middle, leaving a small tail unrolled.

Slide the rolled portion over to the left side of the pan.

Pour half of the remaining mixture onto the empty space, seamlessly extending the unrolled part of the omelet.

Just like patching up crepes when the batter doesn't cover the whole pan.
