Method

Wash a 500 ml jar and sterilize it over steam for 2–3 minutes.

Peel the eggplants, cut into medium cubes, boil for 10–15 minutes, and drain in a colander.

Shred the cabbage, mince the garlic and hot pepper, slice the onion into half-rings, and grate the carrots on a box grater.

Combine all the vegetables in a pot, toss together, add salt and sugar, pour in vinegar, and let sit for 20 minutes.

Transfer the vegetables to the sterilized jar.

Place a cloth in the pot, set the jar in it, pour water up to the shoulders of the jar, bring to a boil, and sterilize for 10 minutes.

Seal with a lid and store in a cool place.
