Method

Cut the cucumbers into thin matchsticks.

Grate the carrots using a Korean carrot shredder.

Combine the vegetables, add salt, toss well, and let sit for 20 minutes.

Dice the onion and sauté in vegetable oil until golden brown.

Add dried basil, ground coriander, chili pepper, black pepper, soy sauce, and minced garlic to the cucumbers, along with a pinch of turmeric.

Pour the hot onion and oil directly over the garlic.

Add the vinegar essence and mix thoroughly.

Garnish with white sesame seeds if desired.

Let marinate for 1 to 1.5 hours.
