Method

Rinse the chicken fillets and pat them dry with paper towels. Cut them into thin strips.

Preheat a skillet well and pour in the vegetable oil.

Once the oil is smoking hot, add the ground pepper and carrot seasoning to the skillet.

Wash and peel the carrots, then grate them—ideally using a special Korean carrot grater. Peel the onions and slice them into thin half-rings.

Two minutes after adding the spices and pepper, add the chicken fillets, carrots, and onions, and mix thoroughly.

Simmer the he for about five minutes, then add the vinegar and salt to taste.

Keep on medium heat for another five minutes, then turn off the heat.

Transfer the he from the skillet into a large salad bowl and let it cool.

Cover with a lid and place in the refrigerator until completely chilled, or even better, overnight.
