Method

Peel the carrots and cut them into thin, long strips. You can use a special carrot grater or slice them with a vegetable peeler and then julienne them. Place the carrots in a deep bowl.

Finely dice the onion and sauté it in plenty of vegetable oil. Cook over medium heat until light golden. Add the ground chili, half a teaspoon of black pepper, coriander, minced garlic, and let it simmer for 1 minute.

Add the entire contents of the skillet to the carrots, along with 3 tablespoons of white wine vinegar or apple cider vinegar. Season with salt and pepper to taste, and mix thoroughly. You can add a little extra sugar if you like.
