For the marinade, take 2 medium pears, 1 medium onion, 8-10 garlic cloves, a small piece of ginger, and blend everything together into a smooth paste. You can simply grate them on a fine grater, but it will take more time.

In a bowl, combine 160g of soy sauce, 70g of mirin (or white wine), 70g of brown sugar, 20g of sesame oil, and season generously with pepper. Add the minced pear mixture and stir well. Let it sit until the sugar is completely dissolved.

Submerge the beef ribs (2 kg) completely in the marinade and refrigerate for 24 hours. Grill the marinated ribs in a skillet or over an open flame (the best option) until done.

Smashed cucumbers make the ideal fresh side dish. Toss the cucumbers with fresh cilantro, white sesame seeds, and dress with sesame oil, soy sauce, and vinegar. Salt to taste.
