Kolivo

Method

Rinse the wheat thoroughly, changing the water several times.

Once the wheat is clean, cover it with cold water and let it soak overnight.

In the morning, cover the wheat with fresh cold water and simmer until the grains split open and all the liquid is absorbed.

Rinse the raisins, dried apricots, and prunes, then pat dry with a kitchen towel.

Chop the almonds with a knife.

Stir the honey, rinsed raisins, and chopped almonds into the kolivo and mix well.

Transfer the kolivo to a serving dish and arrange the dried apricots, prunes, and other dried fruits on top as decoration.
