Method

Dissolve about 70 grams of salt in a liter of water. Cut the broccoli in half without breaking it into individual florets.

Soak the broccoli in the salt brine for about 4 hours, then drain it in a colander.

Prepare the seasoning paste: blend the ginger and garlic into a purée, add hot chili pepper, sugar, anchovy sauce, and water or salt as needed. Slice the onion into thin strips.

Coat the broccoli florets thoroughly with the paste mixture.

Pack the broccoli tightly into a container, place a plate or light weight on top, and cover with a lid.

Leave it at room temperature for 24 hours, then transfer to the refrigerator for 3 to 7 days until ready to serve.
