Method
If using a whole cut of meat, brown it and finely mince it. Pre-made ground meat also works well—lightly sauté it until partially cooked.
Tofu must be thoroughly squeezed using cheesecloth to prevent excess moisture.
Finely chop the kimchi, green onions, and bean sprouts.
Mix all the ingredients together, including the spices, sauce, and starch, until you get a smooth, dense filling.
Wrap the filling in the dumpling wrappers, sealing the edges in your preferred style—you can make simple half-moons or pleated folds.
Cook to your preference: steam for 10–12 minutes, pan-fry with water (sear until golden, add water, and steam covered), or boil in salted water for 5–6 minutes.
