Method

Add the yeast and sugar to slightly warm milk and let it sit for a couple of minutes.

Sift the flour, then mix in the salt and egg. Next, pour in the milk, yeast, and sugar mixture.

Knead the dough for 5 minutes—it will be quite sticky. Cover it with a towel and leave it to rise for at least 1 hour.

Grate the suluguni cheese and shape the majority of it into a ball with your hands.

Lightly press down the risen dough and roll it out. Place the cheese ball in the center and gather the edges of the dough together like a pouch, pinching them at the top.

Brush the unbaked khachapuri with an egg yolk and sprinkle with the remaining cheese. Bake at 180°C for 11–13 minutes.
