Khachapuri Megruli

Method

Dissolve the yeast and sugar in warm water and let it sit for 15 minutes.

Add warm milk to the mixture, then stir in the softened butter, egg, and 260g of flour with salt. Mix well and let it rest for 1 hour.

Dust with 70g of flour and knead the dough on the counter for about 5 minutes.

Divide the dough in half and shape each into a ball. Flatten each ball into a disc, fill with 200g of cheese, gather the edges up and pinch, then flatten again into a round. Turn it seam-side down and roll out with a rolling pin into a circle.

Brush with egg yolk, make a small hole in the center, top with 50g of cheese, and bake at 200°C for 10 minutes, then increase heat to 220°C until golden brown.
