Method

Preheat the oven to 180°C (350°F).

Line a baking sheet with parchment paper.

Make the dough. Combine almond flour, butter, sweetener, sour cream, salt, baking soda, and vinegar. Knead the dough by hand.

Divide the dough into three portions. Place the dough into bags. Put the dough in the freezer for an hour.

Make the caramel. Pour allulose into a saucepan. Place the saucepan on the stove. Melt the allulose until it reaches a caramel color. Add butter to the allulose. Stir with a silicone spatula. Next, add heavy cream. Stir. Simmer for a couple of minutes.

Remove the caramel from the heat. Transfer it to a deep bowl. Add butter. Blend everything with an immersion blender.

Chop the nuts with a knife. Add them to the caramel cream. Mix well.

Line a baking sheet with parchment paper. Take one piece of dough out of the freezer. Grate it directly onto the parchment paper. Bake for 13–15 minutes. Repeat this process for each piece of dough.

Transfer the baked pastry pieces into a bowl by hand. Gently mix them with your hands. Add the caramel cream to the pastry. Stir with a silicone spatula. Transfer everything into a mold (I used a bowl lined with plastic wrap beforehand). Refrigerate overnight to set.
