Method
Take beef shanks that are already cut into pieces, clean them under running water with a sharp knife, and soak them for 2 days, changing the water 3-4 times a day.
Then bring to a boil, let it come to a rolling boil, and drain the water.
Place the beef shanks in a pot, cover with fresh cold water, and simmer over low heat for 8 hours, skimming off the foam occasionally.
And there you have it—your kash is ready to serve.
Serve the kash with garlic, lavash bread, and pickles.
