Method
Cover the chickpeas with cold water and let soak for 12 hours. Drain the water. Add 1 liter of fresh cold water to the soaked chickpeas and cook for 2 hours.
Strain the liquid from the cooked chickpeas into a separate bowl through a sieve—reserve this liquid. Let the chickpeas cool to room temperature. Add salt, olive oil, lemon juice, red and black pepper, and garlic.
Add the sesame paste (tahini). Blend everything thoroughly with an immersion blender. Add 3 tablespoons of the chickpea cooking liquid. Blend thoroughly again.
Drizzle the finished hummus with olive oil. It can be stored in the refrigerator for up to 5 days.
