Method
Start by searing the sausages until they get a nice golden-brown crust.
For the sauce, finely dice the red onion and pickles, then mix in mayo, ketchup, and mustard. Stir it all together well. Feel free to adjust the proportions to your taste.
Now for the star of the show—cheesy corn. Sauté the corn in a pan, add grated cheese and cheddar slices. Stir until you get a nice stretchy, uniform mixture. If you want it extra creamy, splash in a little heavy cream.
Assemble the hot dogs: split the buns, spread the sauce inside, add the sausage, and top generously with that hot cheesy corn filling.
Pop them into a preheated 400°F oven for about 5 minutes so the bun gets crispy and the cheese melts through completely.
