Start by searing the sausages until they get a nice golden crust.

For the sauce, finely dice red onion and pickled cucumbers, then mix in mayo, ketchup, and mustard. Stir it all together until combined.

Cook the corn in a skillet, add grated cheese and cheddar slices. Mix until you get a nice stretchy, uniform mixture. If you like, splash in a little cream.

Split the buns, spread the sauce inside, lay down a sausage, and pile that hot cheesy corn mixture generously on top.

Pop them into a 200°C oven for about 5 minutes until the buns are crispy and the cheese is fully melted.
