Method

Heat the milk in a saucepan over medium heat until it's just about to simmer—do not let it come to a boil.

In a separate bowl, whisk together the cocoa powder and sugar, then pour in a splash of the warm milk and mix into a smooth, thick paste without any lumps.

Whisk the cocoa paste back into the saucepan with the remaining milk, stirring constantly.

Add the broken chocolate, remove from the heat, and stir until completely melted and smooth.

For an even more velvety texture, blend with an immersion blender for 10–15 seconds.

Pour into mugs, top with whipped cream or marshmallows if desired, and serve hot.
