Honey Cake (Medovik)

Method

Place the honey in a heavy-bottomed saucepan, melt it, and add the baking soda.

Bring the mixture to a boil, add the sugar, bring to a boil again, and cook while stirring constantly until the mass turns an amber-orange color.

Add the butter, stirring until it is completely melted.

Pour the honey mixture into a large bowl and let it cool slightly, then add the eggs, mix well, incorporate the flour, and knead into an elastic dough.

Divide the finished dough into 12 portions, roll them out thinly, cut out a circle for each, and set the scraps aside.

Place the cake layers on a baking sheet and bake in an oven preheated to 180°C (350°F) for 4-5 minutes.

Roll out one more layer using the reserved scraps, bake it, and grind it into fine crumbs.

For the frosting, combine the sour cream and powdered sugar, and whip until thickened.

Assemble the cake by spreading the frosting generously between the layers, let it rest briefly, then coat the top and sides with the crumbs and refrigerate for 6-8 hours.
