In a bowl, combine the eggs with the sugar, then add the butter, honey, and baking soda. Place over a double boiler and stir until the sugar dissolves. Once the mixture starts to foam, whisk actively for 3–4 minutes and remove from the heat. Let it cool for 5 minutes, then add the flour and knead into a soft dough.

Divide the dough into 6 portions and roll each piece out thin. Bake at 200°C (400°F) for 3–4 minutes until golden brown.

To make the custard, beat the egg yolks with the sugar, add the starch, and mix until smooth. Pour in the milk and cook over heat, stirring constantly, until thickened. Remove from the stove, cover with plastic wrap pressed directly onto the surface, and let it cool.

Whip the butter for about 5 minutes until fluffy, then add the cooled custard and condensed milk one spoonful at a time, continuing to beat until smooth.

Spread the cream generously over all the layers, covering the top and sides as well. Decorate as desired. Chill in the refrigerator for at least 5 hours, preferably overnight.
