Method

In a saucepan, combine the eggs, sugar, honey, and butter. Stirring constantly, bring the mixture just shy of a boil, but do not let it boil.

Add the baking soda and stir well. Stir in 1 cup of flour; once the dough darkens in color, remove it from the heat.

Work in the remaining flour to form a soft dough. Divide it into 8 equal portions.

Roll each portion out into a thin circle, prick it all over with a fork, and bake along with the trimmings for 5 minutes at 350°F (180°C).

For the frosting, whisk together the sour cream and sugar until the sugar is completely dissolved.

Spread the frosting generously between each layer to assemble the cake. Pulse the reserved baked trimmings into crumbs and coat the top and sides of the cake.

Chill the cake in the refrigerator for at least overnight, preferably 24 hours, so the layers can soften and soak up the frosting.
