Method

In a heavy-bottomed saucepan, melt the honey, add the baking soda, and bring to a boil. Add the sugar, bring back to a boil, and cook while stirring until the mixture turns amber. Add the butter and stir until completely melted.

Transfer the honey mixture to a bowl, let it cool, then add the eggs and whisk to combine. Gradually fold in the flour to form a smooth, pliable dough.

Divide the dough into 12 equal portions, roll each out thinly on parchment paper, cut into rounds, and bake at 350°F (180°C) for 4-5 minutes.

Roll out the leftover dough scraps, bake until crisp, and pulse into fine crumbs.

Whisk the sour cream with powdered sugar until thick and fluffy.

Layer the sponge cakes with the frosting, coat the top and sides of the cake with the crumbs, and chill in the refrigerator for 6-8 hours to set.
