Honey Baklava

Method
Pulse the walnuts in a food processor until finely chopped but not powdery, then toss with the sugar and cinnamon
Trim the phyllo dough to fit your baking dish
Layer 3 sheets of phyllo, generously brushing each sheet with melted butter, then top with a layer of nuts (about 4-5 tablespoons), followed by another 3 sheets of phyllo, and repeat the process
Score the top layers all the way through with a sharp knife. The cut pattern can be anything you like, but this is what gives Baklava its stunning look, so take your time
Bake at 180°C (350°F) for about 40 minutes
Make the syrup: combine the water and sugar, bring to a boil until the sugar dissolves, let it rest for about 5 minutes, then stir in the honey until fully incorporated into the syrup
Once the Baklava is done baking, pour the prepared syrup evenly over it. Let it set for a couple of hours to soak in before serving and enjoying
