Homemade Tomato Paste

A rich, natural tomato paste made using a juicer and subsequent reduction. A great way to preserve homegrown tomatoes for the winter.

Method

Wash the tomatoes, cut the large ones in half, and run them through a juicer. Process the pulp two or three more times to extract a thick purée.

Combine the initial juice and the thick purée in a pot, place over heat, season with a pinch of salt and pepper, and simmer until reduced to a thick paste consistency, usually until the volume decreases by about two-thirds.

Sterilize your jars and lids, pack the hot paste into the jars, seal them tightly, invert, and let sit for a couple of hours.

Store in a cool place.
