Method

Pour water into a pot and bring to a boil.

Add sugar, salt, allspice, and bay leaves.

Simmer the brine over low heat for 7–10 minutes.

Rinse the herring, thawed at room temperature, without gutting or cutting it—simply place it in a container.

Let the brine cool completely, then pour it over the fish.

Place the container on the bottom shelf of the refrigerator.

Let it cure for three days, and it's ready to serve.
