HOMEMADE PEAR COMPOTE WITHOUT STERILIZATION

Method

Rinse the pears, cut them in half or quarters, and remove the cores.

Fill sterilized jars one-third full with pears, add some currants, and pour boiling water over them. Cover with lids and let sit for 5–10 minutes.

Drain the water into a pot, bring it to a boil, and pour it back over the jars for another 5–10 minutes.

Drain the water again, add sugar (about 7 ounces per quart jar), bring the syrup to a boil, and pour it into the jars.

Seal, invert, and wrap until completely cooled.
