Homemade Pear Compote Without Sterilization

Method

Rinse the pears, cut them in half or quarter them, and remove the cores.

Fill sterilized jars one-third full with pears, add some currants, and pour boiling water over them. Cover with lids and let sit for 5–10 minutes.

Drain the water into a pot, bring it back to a boil, and pour it over the jars again for 5–10 minutes.

Drain the water a second time, add sugar at the rate of 200g per three-liter jar, bring the syrup to a boil, and pour it into the jars.

Seal with lids, invert the jars, and wrap them until completely cooled.
