Homemade Napoleon Cake

Method

Thaw the pastry.

Roll out the sheets slightly.

Bake without piercing with a fork to ensure tall, golden layers.

Trim the top crust off each layer, place them in a separate bowl, and crush them into crumbs for dusting.

Carefully split the remaining part of each layer into 2-3 thin sheets.

Assemble a rectangular or square cake by layering the sheets and piecing them together as needed.

Slather every layer generously with cream.

Coat the top with cream as well, wrap the cake tightly in plastic wrap, and refrigerate for two hours.

Unwrap the cake, and coat the sides and top with the reserved crumbs.

Chill in the fridge for another 3-4 hours, or ideally overnight.
