Method

Zest your lemons, taking only the yellow part—the white pith will make the liqueur bitter.

Put the zest in a jar, pour in your spirit base, and let it infuse in a dark place for 2 weeks, shaking it occasionally.

Meanwhile, juice the lemons and freeze the juice.

After 2 weeks, make your syrup: dissolve sugar in water, bring it to a boil, and let it cool.

Strain the infusion, discarding the zest.

Mix it together with the thawed and strained lemon juice and cooled syrup.

Stir well, bottle it up, and refrigerate for another week.
