Method

Cut the kimchi into large chunks. Slice the pork thinly. Cut the onion into thin strips.

Heat sesame oil in a pot and sear the pork until browned, about 2–3 minutes.

Add the onion and garlic, cook for another minute.

Add the kimchi and stir-fry for 3–4 minutes.

Pour in water, then add gochujang, soy sauce, and sugar. Stir to combine and bring to a boil.

Lower the heat and simmer for 15–20 minutes.

Add the tofu and warm through for another 3–5 minutes.

Serve hot, scattered with green onion, alongside steamed rice.
