Method

Bring unpasteurized milk to a boil, skim off the skin, and let it cool.

Pour the milk into the multicooker bowl, close the lid, and set the Multipair mode to 35-40 degrees Celsius for 8-10 hours.

Start the program, and in about 5 minutes once the milk has warmed up to the target temperature, stir in the kefir starter that has been dissolved in a small amount of the milk.

Close the lid and let the program run until the completion signal sounds.

Allow it to cool to room temperature before serving, or transfer it to the refrigerator for storage.
