Method
Divide the ground meat into 4 portions, roll into balls, and shape into 2 cm thick patties with a slight indentation in the center. Season with salt and pepper right before cooking.
Get your skillet screaming hot and cook the patties for 3–4 minutes per side. Flip just once, and 3 minutes in, top with a slice of cheese and cover with a lid for 30 seconds.
Toast the buns cut-side down in the same skillet for 1 minute.
Make the sauce: combine mayonnaise, ketchup, mustard, finely diced pickles, and paprika. Chill in the fridge for 20 minutes.
Make the caramelized onions: slice the onions into half-moons and sauté in butter over low heat for 25–30 minutes.
Crisp up the bacon: lay the strips in a cold pan and fry until crispy.
Assemble the burger: bottom bun, lettuce leaf, cheesy patty, tomato, pickle, and the sauce slathered on top and bottom.
