Method
Make the sponge: combine the yeast, 1 tablespoon of sugar, and 100 ml of milk in a bowl. Let it sit for 10 minutes.
In a separate bowl, mix the melted butter, 1 tablespoon of sugar, 1 teaspoon of salt, the remaining milk, and the yeast mixture. Stir well and gradually sift in the flour.
Cover the dough with a towel or plastic wrap and let it rise in a warm place for 1 to 1.5 hours.
Divide the risen dough into equal portions, roll them out into rounds, spoon in the egg and green onion filling, and pinch the edges to seal. Place the pirozhki seam-side down on parchment paper and let rest for 10 minutes.
Whisk the egg yolk with 3 tablespoons of milk and brush over the pirozhki. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes.
Let the pirozhki rest for 10 minutes before serving.
