Method
Wash all the dried fruits thoroughly using mustard or baking soda, then dry them completely.
Grind the nuts and dried fruits together using a meat grinder, mixing them as you go for easier processing.
Add the whole seeds and salt to the ground mixture.
Lightly toast the rolled oats in the oven.
Mix all the dry ingredients together, divide the mixture in half, and combine it with honey warmed in a water bath, kneading thoroughly into a slightly sticky dough.
Transfer the mixture onto a baking sheet lined with parchment paper, spread it out evenly, press down firmly using a rolling pin, spatula, or your hands, and smooth out the edges.
Score or slice the mass into portion-sized bars with a knife.
Let the baking sheets rest for 4-8 hours to set.
Bake in an oven preheated to 120-140°C (250-285°F) for 20-30 minutes until lightly golden.
Cut the bars all the way through with a knife after baking, let them cool, and dry them in a dehydrator at 60°C (140°F) for about 4 hours.
