Homemade Deli-Style Meat Roll
A homemade meat roll made from chicken breast and pork belly with bacon, baked in a roasting sleeve. A great, natural alternative to store-bought cold cuts for sandwiches and appetizers.

Method
Slice the bacon, cut the chicken breast into portion-sized pieces, and tenderize them.
Trim the pork belly of any membranes and excess fat, then pound it out into one large cutlet.
Season the chicken and pork belly with salt and pepper, brush with mustard, sprinkle with dried herbs, work the spices into the meat, lay down the bacon, pound again, and top with the chicken cutlets.
Season with salt, rub with pressed garlic and spices.
Roll it up very tightly and tie it with kitchen twine in a netting pattern.
Tie it up extremely tightly, otherwise it will simply fall apart.
Generously rub the roll with salt and spices, place it inside a roasting sleeve, and set it on a baking sheet.
Let it marinate for 1 hour.
Bake at 200°C (400°F) for 30 minutes, then lower the temperature to 100°C (212°F) and bake for 1 hour.
Let it cool and refrigerate for 3-4 hours.
