Method
Rinse the liver, trim away any connective tissue, and pat dry with paper towels. Roughly slice the onions into half-moons, cut the carrots into thin rounds, and simply crush the garlic cloves with the flat of a knife.
Take a deep oven-safe baking dish. Layer the onions, carrots, and garlic on the bottom and drizzle with vegetable oil. Arrange the chicken liver in an even layer on top. Season with salt, pepper, and nutmeg.
Cover the dish tightly with a sheet of foil and bake in the air fryer at 180°C for 20 minutes. Then, remove the foil and cook for another 5 minutes to achieve a light, golden brown finish.
Transfer the hot liver along with all the vegetables and cooking juices into a blender. Add the softened butter and blend until completely smooth and creamy.
Transfer the finished pâté into a jar and refrigerate for 1–2 hours to set.
