Method
Boil the beets, carrots, potatoes, and eggs until tender. Let them cool, then grate the vegetables on a box grater.
Finely dice the onion, pour boiling water over it for about a minute, then drain to remove the sharp bite.
Cut the herring into small cubes.
Set up a ring mold on your serving plate and place a glass in the center to help you build the salad neatly.
Start with a layer of potatoes—press down gently so the salad stays light. Spread a thin layer of mayo on top.
Next comes the herring layer, spread with mayo.
Then add the onion, followed by a layer of grated eggs, then the carrots—mayo between each layer.
Top with the beets, spread generously with mayo and work it into the beets a bit. Finish with a sprinkle of grated egg yolks.
Remove the glass and ring mold, garnish as you like.
Refrigerate for at least 12 hours so all the flavors come together.
