Method

Boil the potatoes in salted water until tender. Let them cool, then mash with a potato ricer or blend until smooth. Add the egg, starch, flour, and dried herbs.

Work the mixture into a soft, slightly sticky dough—mix quickly to avoid overworking the potatoes.

Shape the dough into a log and cut into 0.3 to 0.4-inch (0.8–1 cm) pieces.

Drop the gnocchi gently into a large pot of boiling salted water. Cook in small batches for 1 to 2 minutes after they float to the surface.

Remove with a slotted spoon and transfer to a colander. Once the water drains off, immediately toss with melted butter and scatter with fresh herbs. Serve piping hot.
