Method

Wash the fruit or berries, remove pits if needed. Blend or grind into a smooth purée.

In a saucepan, combine the fruit purée, sugar, water, and lemon juice. Bring to a boil over medium heat, stirring constantly.

Mix modified starch E1422 with a small amount of cold water (about 50 ml) until smooth.

Pour the starch mixture into the boiling purée in a thin stream, stirring vigorously. Cook for 2-3 minutes until thickened.

Pour the finished jam into sterilized jars. Store in the refrigerator.
