Peel the potatoes and slice them thinly (a mandoline works great). Cut the meat into small pieces or strips. Finely dice the onion and carrots.

Layer half of the potatoes on the bottom of a baking dish, season with salt and pepper. Evenly distribute the meat over the top, followed by the onion and carrots. Cover with the remaining potatoes. You can lightly brush each layer with mayonnaise to keep it juicy.

Bake in a preheated oven at 180°C (350°F) for 50-60 minutes. Sprinkle with grated cheese 15 minutes before it's done. Total time is 1 hour and 15 minutes.
