Method
Rinse the meat, pat it dry, and cut it into bite-sized cubes.
Finely dice the onion.
Heat oil in a deep skillet or Dutch oven and sear the meat over high heat for about 5 minutes until browned.
Add the onions to the meat and sauté over medium heat, stirring occasionally, for 5–7 minutes until translucent and tender.
Season the meat with salt and pepper, dust with flour, mix well, and cook for another 2–3 minutes.
Stir in the tomato paste until fully incorporated.
Pour in 2 to 3 cups of water or beef stock, stir well, and drop in the bay leaf.
Cover with a lid and simmer on low heat for 60–90 minutes until the meat is fork-tender.
Garnish with freshly chopped herbs just before serving.
