Method

Combine the soft quark with Greek yogurt and sweetener, mixing thoroughly. For an extra smooth and creamy filling, you can blend it with an immersion blender.

Pour warm water into a wide plate. Dip a sheet of rice paper into it for 10 seconds until it becomes soft and pliable.

Transfer the softened sheet into a small, deep bowl, gently pressing it against the sides.

Place about a tablespoon of the quark mixture in the center. Add a teaspoon of thick jam and cover it with another tablespoon of the quark filling.

Gather the excess edges of the rice paper over the filling and seal tightly to form a round mochi. Trim away any overly long edges if necessary.

Place the assembled mochi seam-side down on a cutting board or plate lightly greased with vegetable oil. Repeat the process for the remaining mochi.

Dust the desserts with cornstarch and place them in the freezer for 30 minutes.

Let the mochi sit at room temperature for a few minutes before serving.
