Method

An hour before you start baking, take the Greek yogurt, cream cheese, and eggs out of the fridge so they reach room temperature.

Combine all the ingredients for the crust.

Press the mixture firmly into the bottom and up the sides of a greased springform pan.

Bake the crust at 180 °C for about 20 minutes.

In a separate bowl, mix together the Greek yogurt, cream cheese, eggs, maple syrup, and vanilla—beat with a hand mixer until creamy.

Pour the filling over the crust. Bake at 180 °C for about 45–50 minutes, covering the pan with foil after 15 minutes.

Let the cheesecake cool right in the pan.

Chill in the fridge in the pan for at least 2 hours.

Make the chia jam: heat the berries in a saucepan over medium heat, mash them, add the chia seeds, lemon juice, and maple syrup, stir, and let cool.

Top the cheesecake with the jam to serve.
