Method
Shape the ground meat into small meatballs. Drop them into boiling water and cook for 25 minutes.
Grate the beet and carrot.
Finely chop the cabbage, onion, and garlic. Add the cabbage and onion to the meatballs and simmer for 10 minutes.
While everything is cooking, lightly sauté the beet and carrot with a splash of water.
Peel and finely dice the tomato, add it to the beets and carrots, and simmer a bit longer.
Transfer everything into the pot, then stir in the buckwheat, garlic, and vinegar, season with salt and pepper, and cook until tender.
Serve garnished with fresh herbs and a dollop of yogurt or sour cream.
