Method

Bring all ingredients to room temperature beforehand.

For the soufflé, bloom the gelatin in the milk, stir, and warm in the microwave until dissolved without letting it boil.

Whip the egg whites with a pinch of salt to soft peaks, pour in the gelatin milk, and whip for about another minute.

Fold the whipped egg whites gently into the quark using a spatula.

Pour into a roughly 15 cm (6-inch) springform pan and chill in the fridge for an hour.

For the chocolate layer, bloom the gelatin in water, combine the milk with the cocoa powder and sweetener, warm until the cocoa dissolves, then stir in the gelatin.

Let it cool to room temperature, gently pour over the soufflé layer, and return the dessert to the fridge until completely set.
