Method
Cook the rice until done and leave it covered.
Slice the onion into thin half-rings.
Pour water, soy sauce, mirin, and sake into a small skillet, add the sugar, and mix well.
Add the onion and simmer for about 5 minutes until tender.
Place thin slices of beef directly into the sauce, gently stir, and cook for 3-5 minutes over medium heat. The meat should remain very tender and juicy.
Place the hot rice in a deep bowl.
Carefully arrange the beef and onions on top and drizzle with a few spoonfuls of the flavorful sauce.
Garnish with green onions and, if desired, add a little pickled ginger.
