Method

Combine all the dough ingredients except for the flour.

Gradually add the flour until you get a medium-firm dough, cover, and let it rest for about 20 minutes.

Divide the dough into 10 equal pieces, roll them into balls, place them on a starch-dusted tray, cover tightly, and let them rest for another 10 minutes or so.

Roll out each ball to the size of a dinner plate, dusting starch between the layers to stack 5 layers on top of each other, then roll them out together.

Melt the butter and vegetable oil together for brushing.

Boil the potatoes, mash them, add grated cheese and spices, and mix well for the filling.

Assemble the pastries using the oil and filling, and arrange them on a baking sheet.

Bake in a preheated oven at 180°C without convection until golden brown.
